Shredded Catalina Chicken
This recipe is simple and only has 3 ingredients so it's a good meal when the budget is tight. It involves the crock pot which is my new favorite invention in the world! Who can resist a meal that practically fixes itself?!
- 2-4 boneless/skinless chicken thighs
- 1 bottle of Catalina salad dressing (I used the light version)
- Rice
Cook on low for 7 hours.
Shred chicken and cook for 1 more hour on low.
Serve over a bed of rice.
