Spice Cake Cupcakes


  • 3 c all-purpose flour
  • 2 c sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 1-1/8 tsp ground cinnamon (divided)
  • 1 tsp pumpkin pie spice
  • 2 c water
  • 2/3 c canola oil
  • 2 Tbs white vinegar
  • 2 tsp vanilla extract
  • 1 can vanilla frosting
1. In a large mixing bowl, combine flour, sugar, soda, salt, divided portion of cinnamon, and pumpkin pie spice. Stir.
2. In smaller mixing bowl, combine water, oil, vinegar, and vanilla extract. Add to dry ingredients. Beat until smooth.
3. Line muffin pan with cup cake liners. Spoon batter into each muffin cup (approximately 3/4 full).
4. Bake at 350 degrees for 18-20 min or until toothpick inserted comes out clean. Cool on a wire rack.
5. Mix remaining cinnamon with 1 can vanilla frosting. Apply a generous amount of frosting to each cupcake after they have cooled.
6. Makes 2 dozen cupcakes
