Pork Chili Verde


This dish was very filling and fairly inexpensive. And one again used my very favorite invention...the crock pot!

  • 12 oz chili verde sauce
  • 1 lb pork stew meat
  • 1 can whole black beans, drained
  • 1 can whole pinto beans, drained
  • 4 oz chopped green chilies
  • 1/2 cup green onion, chopped
Add all ingredients into a slow cooker.
Cook on low for 7-8 hours.

Shredded Catalina Chicken


This recipe is simple and only has 3 ingredients so it's a good meal when the budget is tight. It involves the crock pot which is my new favorite invention in the world! Who can resist a meal that practically fixes itself?!
  • 2-4 boneless/skinless chicken thighs
  • 1 bottle of Catalina salad dressing (I used the light version)
  • Rice
Place chicken in crock pot and cover with dressing.
Cook on low for 7 hours.
Shred chicken and cook for 1 more hour on low.
Serve over a bed of rice.

Ham Fried Rice


So I was wondering what to do with some leftover ham and my husband suggested ham fried rice. It was so tasty!
  • 1 tsp oil
  • 1 egg
  • 1 green onion
  • 1/2 cup diced ham
  • 2 cups cooked rice
  • 1 Tbs soy sauce
Heat oil in the skillet.
Scramble the egg until cooked completely.
Cut up the green onion and add with diced ham.
Cook until the green onion wilts and becomes brighter in color.
Add the rice and soy sauce and cook until warmed all the way through.

Foil-Pack Taco Chicken



My husband and I really like this recipe. It has lots of flavor, it's quick and easy, and nearly all the ingredients are already in your refrigerator or pantry.

  • 4 boneless skinless chicken breasts
  • 4 tsp taco seasoning
  • 2 cups thinly sliced potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • sour cream (optional)
Preheat the oven to 400 degrees.
Place potatoes and chicken in the middle of a piece of foil.
Sprinkle with the taco seasoning.
Add salsa and cheese.
Fold the foil to make a packet.
Place in baking pan.
Bake for 30-35 min or until chicken is done.
Top with sour cream (if desired).
