Lemon Breaded Cod


This was some of the best fish I have ever had!
  • 4 Cod fillets
  • 1 cup seasoned bread crumbs
  • 2-3 Tbs butter
  • 1 lemon
Preheat oven to 375 degrees.
Melt butter in the bottom of a medium size baking pan.
Cut Cod fillets into medium size pieces.
Coat fish in bread crumbs and place into baking pan.
Sprinkle leftover bread crumbs over the top.
Spritz entire lemon over the top.
Cook for 15-20 minutes until done.

Shredded black bean chicken


This was great served over rice, but I think it would make an excellent filler for tacos or burritos.
  • 3-4 chicken breasts
  • 1 cup salsa
  • 1 cup chicken broth
  • 1 can black beans, drained
  • 1 package taco seasoning
Combine all five ingredients in a crock pot and cook on low for 6 hours.
Remove chicken and add to the sauce:
  • 1/2 cup sour cream
  • 1 cup grated cheddar cheese
Stir until sour cream is mixed and cheese is melted.
Shred chicken and mix back into the sauce.
Serve over rice or alone.
Top with chopped red and green peppers (optional)

Bacon Potato Soup


This recipe is the best soup recipe I have come across yet.
  • 10 peeled potatoes
  • 5 cups water
  • 1 medium onion finely chopped
  • 4 tsp instant chicken bouillon granules
  • 6 slices bacon (cooked and crumbled)
  • 1 can (12 oz) evaporated milk
  • 2 cups sharp cheddar cheese grated
Combine potatoes, water, onion, and bouillon granules in crock pot. Cook 6 hours on low or until potatoes are tender. Add bacon, milk, and cheese. Stir until cheese is melted.

Frito Pie


I was somewhat skeptical of this recipe when I looked at the ingredients. The idea sounded good, but I wasn't sure how it would all come together. It was actually pretty good. It had a sweet taste to it so if you don't like that, I would recommend just making the whole thing easier and adding chili instead of making this concoction in the crock pot.

  • 1/2 lb ground beef (browned and drained)
  • 2 cans pork and beans (with the pork removed)
  • 1 can (4 oz) chopped green chilies
  • 1 can (8 oz) tomato sauce
  • 4-6 drops Tobasco sauce
  • 1 bag Fritos corn chips
Combine all the ingredients (except the chips) in a crock pot. Cook on low for 6-8 hrs. Serve over a small pile of Fritos corn chips. Garnish with lettuce, tomato, sour cream, and shredded cheese.
